Swedish brown sauce

Ingredients

300 g water
165 g double cream approximately 37 % fat, 150 ml is about 165 g.
40 g butter
40 g flour
8 g soy sauce 1 tsp is about 4 g.
7 g Dijon mustard 1 tsp is about 7 g.
3 g vegetable bouillon
3 g beef bouillon

Melt butter

  • 40 g flour

Add flour and brown:

Whisk in the flour and brown it for 2 minutes (while whisking).

  • 3 g vegetable bouillon
  • 3 g beef bouillon
  • 300 g water

Add stock:

While continuing to stir, add vegetable and beef stock. (The original recipe called for 150 ml of beef stock and 150 ml of vegetable stock. However, it's easier for us to scale it when it's given in terms of bouillon, which we can readily obtain in cubes or granulated. The amounts here assume 10 g bouillon (1 cube) per 500 ml water to get stock.)
