Speculaas christmas balls

Ingredients


250 g speculaas cookies
150 ml heavy cream
100 g almond flour alternatively you can blanche
100 g white chocolate
3 tbsp liquid honey

  • 250 g speculaas cookies
  • 90 g almond flour | alternatively you can blanche

Mix almonds and the speculaas cookies


  • 150 ml heavy cream

Heat cream until it's almost boiling


  • 90 g white chocolate

Remove cream from heat and stir in the chockolate:

Adding the chockolate in chunks makes the dissolving go smoother. You can alternatively grate the chockolate before you add it, but it's usually more work and the end result is the same.


  • 3 tbsp liquid honey

Stir in the honey


Let the mixture cool off for about 5 minutes


Mix the wet and dry into a smooth dough


Let the dough cool in the fridge for 30 minutes


Shape the dough into small balls


  • 10 g almond flour
  • 10 g white chocolate

roughly chop white chockolate and mix with almonds for rolling the balls in


Roll the balls in the white chockolate and aldmon crumb
